Signora Pilato Organic Extra Virgin Olive Oil!

What Makes our Extra Virgin Olive Oil a Superior Product?

First - Our olives only come from the Agrigento province in Sicily.  We do not blend olive oils from different countries.  Our olive oil is 100% Sicilian.  This allows us to carry the seal from the government of Sicily stating that we are 100% Sicilian.

Second - We only use two varieties of olives in producing our olive oil:  Biancolilla and nocellara del belice.  These two types of olives produce a light and fruity oil that is widely appealing.

Third - In the production of our extra virgin olive oil, we harvest and bottle in less than eight (8) hours.  Once an olive is picked from the tree, the fermentation process starts.  If longer than eight (8) hours, the fermentation process makes the olive oil turn bitter in taste and have undesirable qualities.  We strive to pick and bottle our olive oil in a shorter time period than required in order to produce a longer shelf life without the use of chemicals.

Fourth - Our climate is a dry Mediterranean climate.  Due to the summer heat and aridness of southern Sicily, our oil is higher in heart protecting polyphenols than typical olive oil.

Finally - We are ORGANIC!  We carry the European Commission seal for meeting the organic standard.

Our Story

(An Article from the Heart)

Like the roots of the olive trees that grow in the rich Sicilian soil, our family has roots in southern Sicily.

Our product “Signora Pilato” (Mrs.  Pilato) Extra Virgin Olive Oil is named after our mother (Melchiora DiSalvo Pilato).    She was born in Realmonte, Sicily.  Married her husband Cologero (Charlie) (a Sicilian from her hometown living in America) and moved to America.

The name Melchiora is a rare name.  The name originates from name of Melchior.  One of the three wise men from Bible.  Its meaning is “God is my light”.

Once she moved to America, some of her relatives started calling her Millie.  Much shorter and easier to remember than Melchiora.

Our mother was an artist at heart.   Whether she was cooking, sewing or decorating, her work had artistry.  She even made wedding dresses. Our mother was known for her culinary skills that multiple restaurants and chefs asked for her recipes.   She held highs standards, was an exacting cook and she knew GOOD OLIVE OIL!

The photo used on the bottle is of our mother at approximately age 21, prior to her marriage.  Due to her beauty, people wanted to use this photo on a wine bottle.  Her father would not allow this because following the norms of the time it was deemed inappropriate.

In loving memory, we put the photo on our bottle of premium olive oil from her home town of Realmonte, Sicily.

Testimonial

“For all my adult like, I have had an issue with high bad cholesterol (low density lipoproteins (LDL)) and low good cholesterol (high density lipoproteins (HDL)).  This has been a family issue.  Since starting a regiment of a table spoon of extra virgin olive oil, my HDL level has gone up while my LDL level has gone down. This is my personal testimony.  This content is for information purposes only and should not be taken as professional medical advice. ”
