The fermentation process begins as soon as an olive is picked from the tree. The longer the olive is exposed to the air, the more bitter it becomes. Our olives are picked and cold-pressed into oil in the shortest time frame possible to ensure the highest quality and a longer shelf life, without using chemical preservatives.

The heat and aridness of southern Sicily create the perfect climate for olive trees. As a result, our oil is higher in heart-protecting polyphenols than typical olive oil.
Our Namesake
Our mother, Melchiora DiSalvo Pilato. affectionately known as "Millie," was born and raised in the small town of Realmonte, Sicily. Her roots intertwined with those of Calogero "Charlie" Pilato, a fellow Realmonte native who would become her husband and the father of their children.
Charlie, driven by ambition and the promise of opportunity, had already embarked on his journey to America. After their wedding in their hometown, the newlyweds faced a bittersweet separation while Charlie continued to build their foundation in America. Six months later, Mrs. Pilato crossed the Atlantic to join her husband and begin their American dream together.
If you haven’t heard the name Melchiora, you are not alone. Derived from Melchior, one of the three wise men in the Bible, it means “God is my light.”
Millie was an artist at heart. She brought an artist’s eye to everything she did, from sewing to decorating- even crafting elaborate wedding gowns!
Her art took another level, however, in the kitchen. Restaurants and chefs would even ask for her recipes.
Melchiora held recipes to the highest standards, and as an exacting cook, she knew that GOOD OLIVE OIL was the secret to delicious food!
Melchiora's striking beauty was well-known throughout her small town, So much so, that a local vineyard wished to feature this photograph of Melchiora on a wine bottle. However, her father, adhering to traditional values and customs regarding young women's modesty, declined the offer.
Today, you can see this image of our mother on every Signora Pilato Olive Oil bottle. She is lovingly remembered as she was around 21 years old, with every pour of flavorful olive oil from her hometown of Realmonte.
