We only use two varieties of olives in producing our olive oil: Biancolilla and Nocellara del Belice produce a uniquely appealing light and fruity oil. Our olives are cold pressed first, without the use of chemicals.
From the orchard to the bottle in less than 8 hours. The fermentation process begins as soon as an olive is plucked from the tree. The longer it sits, the more bitter its oil. Our olives are picked and bottled into oil in the shortest time frame possible to ensure the highest quality and a longer shelf-life, without using chemical preservatives.
The heat and aridness of southern Sicily create the perfect climate for olive trees. As a result, our oil is higher in heart-protecting polyphenols than typical olive oil.
